Ingredients
1 lb boneless chicken, pork or beef…cut into bite-sized strips
2 bunches of spring onions, sliced (keep the bulbs and greens separate)
4 eggs, boiled and peeled
1 lb spaghetti, cooked according to package directions
8 cups of water
1 (5 oz) package of yat ga mein seasoning (or use your own blend of salt, pepper, garlic powder, onion powder, paprika and cayenne pepper)
Soy sauce, to taste
Optional garnishes: boiled shrimp, hot sauce, ketchup, boiled cauliflower, boiled broccoli, boiled carrots
Instructions
In a large pot, bring the water to a boil and add the chicken Simmer until the chicken is cooked through, about 15 minutes Remove the chicken from the
pot and set aside Reserve 8 cups of the cooking liquid
In a small bowl, whisk together the yat ga mein seasoning and some of the reserved cooking liquid until well combined Pour the mixture back into the pot and bring to a boil Reduce the heat and simmer for 5 minutes, stirring occasionally
Cut the eggs into quarters and set aside
Divide the cooked spaghetti among four large bowls Top with chicken, spring onion greens and egg quarters Ladle some of the hot broth over each bowl and season with soy sauce as desired
Enjoy your yat ga mein with your choice of garnishes
