Kale With Sausage Soup
This recipe is so healthy and hearty. Have some garlic bread and some iced tea with this meal. 1 lb stew or ground beef (stew beef should be cut to about 1" cubes) 1 lb linguica sausage or chorizo sausage or even kielbasa sausage depending on your choice of spice 6 kale leaves stemmed and cut into bite sized pieces 1 medium onion chopped 3 cloves of garlic minced 3 red potatoes cubed 1 rib of celery diced 1 can of red kidney beans other beans can be substituted 2 quarts of chicken broth low sodium diced carrot can be added although i didn't this time salt and pepper for seasoning red pepper flake (optional) broth can be thickened with cornstarch or i like to use instant potato flakes Cut sausage in half lengthwise then slice into half moons brown linguica in a stew pot remove from the pot and set aside. Add stew beef to the pot and brown Add onion cook
for 1 minute add garlic cook 1 more minute then add 1 quart of chicken broth and stew beef over medium low heat for 20 minutes. Add second quart of chicken broth, celery, potatoes, and kale. Bring to a boil and cook 10 minutes for potatoes to soften and kale to be tender. Kale can also be added 1/2 5 min each if you prefer a brighter color and a firmer texture. Add kidney beans cook 2 more minutes to warm beans. garnish with chopped parsley or cilantro this is a great soup to prepare and leave in a crock pot add more chopped kale and let cook on warm all day. Enjoy.
