Ingredients:
- 1 lb flank steak, thinly sliced
- 1 tablespoon olive oil
- 1 packet taco seasoning mix
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 cup shredded cheddar or Monterey Jack cheese
- 8 small flour or corn tortillas
- Optional toppings: salsa, sour cream, avocado, cilantro
Instructions:
1. In a large skillet, heat the olive oil over medium-high heat. Add the sliced flank steak and cook until browned, about 5-7 minutes.
2. Add the taco seasoning mix to the steak, along with a splash of water, and stir to combine. Cook for an additional 2-3 minutes until the steak is coated in the seasoning.
3. Push the steak to one side of the skillet and add the sliced
onions and bell peppers. Cook until the vegetables are tender, about 5-7 minutes.
4. Preheat another skillet over medium heat. Place a tortilla in the skillet and sprinkle a generous amount of cheese on one half of the tortilla. Once the cheese starts to melt, add a portion of the steak and vegetable mixture on top of the cheese.
5. Fold the tortilla in half and cook for another minute or two, until the cheese is melted and the tortilla is crispy.
6. Repeat the process with the remaining tortillas and filling.
7. Serve the steak and cheese tacos hot with your favorite toppings such as salsa, sour cream, avocado, and cilantro.
