Beef Birria Egg Rolls with Adobo Sauce. These egg rolls are a fusion of Tex-Mex flavors and make for a delightful appetizer. Let’s get cooking! Beef Birria Egg Rolls with Adobo Sauce Ingredients: 4 dried ancho chilies 6 dried guajillo chilies 1 tbsp honey 1 tbsp white vinegar 1 tsp oregano ½ tsp ground cumin ¼ tsp each cinnamon and ground cloves 2 cups water 1 tbsp olive oil 3½ lbs beef short ribs ½ tsp each garlic powder, kosher salt, and black pepper 2 bay leaves 2 sprigs fresh thyme 1¼ cup chicken stock 1 cup broccoli stems, peeled and julienned 1 cup carrots, peeled and julienned 1 cup red peppers, peeled and julienned 15 egg roll wrappers 2 cups vegetable oil for frying Instructions: Prepare the Adobo Sauce: Remove the seeds and stems from the dried chilies. Toast the chilies in a cast iron skillet on high heat until fragrant. Boil the chilies along with 2 cups of water in a saucepan for 5 minutes. Drain the chilies and blend them with fresh water, vinegar, oregano, cumin, cinnamon, and cloves until smooth. Preheat the oven to 300°F. Braise the Beef: Season the beef short ribs with garlic powder, kosher salt, and black pepper. In an enameled cast iron Dutch oven, heat olive oil over medium-high heat. Sear
the beef short ribs until browned on all sides. Add the bay leaves, fresh thyme, and chicken stock. Pour the prepared adobo sauce over the beef. Cover the Dutch oven and bake in the preheated oven for about 4 hours or until the beef is tender. Assemble the Egg Rolls: Remove the beef from the Dutch oven, shred it, and discard any bones. Mix the shredded beef with julienned broccoli stems, carrots, and red peppers. Lay out an egg roll wrapper. Place a portion of the beef and vegetable mixture in the center. Roll up the wrapper, tucking in the sides as you go. Seal the edges with a little water. Fry the Egg Rolls: Heat vegetable oil in a deep fryer or large pot to 370°F. Fry the egg rolls in batches until golden brown and crispy (about 6 minutes). Drain on paper towels. Prepare the Dipping Sauce: Mix some of the adobo sauce (from the braised beef) with chicken stock and honey. This becomes your flavorful dipping sauce. Serve: Serve the Beef Birria Egg Rolls with the adobo dipping sauce on the side.
