Ingredients For the Burgers: 1.5 pounds ground beef (80/20 blend) Salt and pepper to taste 1 teaspoon garlic powder 1 teaspoon onion powder 6 slices cheddar cheese 6 hamburger buns For the Caramelized Onions: 2 large onions, thinly sliced 2 tablespoons butter 1 tablespoon olive oil Salt to taste For the Special Sauce: 1/2 cup mayonnaise 1/4 cup ketchup 2 tablespoons dill pickle relish 1 tablespoon Dijon mustard 1 teaspoon garlic powder 1 teaspoon smoked paprika 1 teaspoon Worcestershire sauce 1 teaspoon pickle juice (optional) Heat the butter and olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown
and caramelized, about 20-25 minutes. Set aside. In a small bowl, whisk together the mayonnaise, ketchup, dill pickle relish, Dijon mustard, garlic powder, smoked paprika, Worcestershire sauce, and pickle juice (if using). Adjust seasoning to taste and set aside. Preheat your grill or a skillet over medium-high heat. In a large bowl, combine the ground beef, salt, pepper, garlic powder, and onion powder. Mix gently to combine. Divide the mixture into 6 equal portions and shape them into patties. Grill the patties for about 4-5 minutes per side, or until they reach your desired level of doneness. During the last minute of cooking, place a slice of cheddar cheese on each patty and allow it to melt. Assemble the Burgers: Toast the hamburger buns on the grill or in a skillet until golden brown. Spread a generous amount of the special sauce on the bottom half of each bun. Place the cheeseburger patty on top, followed by a heap of caramelized onions. Add any additional toppings you like (lettuce, tomato, pickles, etc.). Top with the other half of the bun and serve immediately.
