Lasagna soup is a delicious and easy way to enjoy the flavors of lasagna in a comforting bowl of soup. It's perfect for cold winter nights or when you crave a hearty and satisfying meal. You can make it with ground beef, sausage, spinach and three types of cheese, or customize it with your favorite ingredients. Here's how to make it: Ingredients: - 1 tablespoon of olive oil - 1/2 pound of lean ground beef - 1/2 pound of sweet Italian sausage, casings removed - Salt and pepper, to taste - 1 medium onion, chopped - 3 cloves of garlic, minced - 2 tablespoons of tomato paste - 4 cups of low-sodium chicken broth - 2 cups of marinara sauce - 1 teaspoon of dried basil - 1/2 teaspoon of dried oregano - 1/4 teaspoon of dried rosemary - 1/4 teaspoon of dried thyme - 8 lasagna noodles, broken into bite-sized pieces - 2 cups of baby spinach leaves - 1/2 cup of shredded mozzarella cheese - 1/4 cup of grated parmesan cheese - 1/4 cup of ricotta cheese - Fresh basil leaves, for garnish Directions: 1 In a large pot over medium-high heat, heat the olive oil
and cook the ground beef and sausage, breaking them up with a wooden spoon, until browned and cooked through Season with salt and pepper to taste Drain the excess fat and transfer the meat to a plate Set aside 2 In the same pot over medium heat, add the onion and garlic and cook, stirring occasionally, until soft and fragrant, about 5 minutes Add the tomato paste and cook for another minute, stirring well 3 Add the chicken broth, marinara sauce, basil, oregano, rosemary, thyme and some more salt and pepper to taste Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes 4 Add the lasagna noodles and spinach and cook, stirring occasionally, until the noodles are tender, about 10 minutes If the soup is too thick, you can add some more broth or water to thin it out 5 In a small bowl, stir together the mozzarella, parmesan and ricotta cheeses 6 To serve, ladle the soup into bowls and top with a dollop of the cheese mixture and some fresh basil leaves Enjoy!
